In Japan, hōjicha is the tea you reach for after a rich, savory meal. Its roasted, nutty warmth cuts through the deep umami of yakisoba — the pork cracklings, the sardine powder, the sauce — and leaves your palate clean and satisfied.
Hōjicha is made by roasting green tea leaves over high heat, which removes most of the caffeine and bitterness. The result is a smooth, amber-colored brew with a warm, toasty aroma that feels nothing like ordinary green tea.
